Niti najmanj grenka pomarančna marmelada / Bitterless orange marmelade

Sezona citrusov je v polnem teku. Krasne jedi in napitke lahko pripravimo iz njih. Mene pa je premamila marmelada. Nikoli nisem oboževala pomarančne marmelade, ker je imela vedno grenak priokus, zato mi je krasen izziv predstavljalo narediti domačo pomarančno marmelado – sladko in prav nič grenko. In veste kaj? Uspelo mi je in na ta recept sem zares ponosna, kajti marmlada je božanska! Ne samo, da ni grenka, tudi ravno prav sladka je in ravno pravšnje gostote.

Popolna je v kombinaciji s kruhom in maslom ali z rogljički, meni se že cedijo sline in se res veselim jutrišnjega zajtrka.

Preprost recept z mini trikom in kakšno skrivno sestavino, pa tudi vas čaka nova najljubša marmelada!

The citrus season is fully on board. Great dishes and beverages can be made from them. But I was lured by the jam. I never loved orange marmalade because it always had a bitter taste, so it was a great challenge for me to make homemade orange marmalade – sweet and no bitter at all. And you know what? I made it and I’m really proud of this recipe, because the marmelade is divine! Not only is it not bitter, it is just as sweet and with perfect density.

It’s perfect in combination with bread and butter or croissants, I’m already hungry and I’m really looking forward for tomorrow’s breakfast.

A simple mini-trick recipe and some secret ingredients and you’re one step closer to your new favorite marmelade!

Sestavine

  • 1,2 kg olupljenih pomaranč
  • 2 limoni
  • 800 ml vode
  • 2 pomaranči za 150 ml iztisnjenega pomarančnega soka (ali po potrebi kakšna več, odvisno od velikosti)
  • 1,2 kg želirnega sladkorja
  • 30 ml ruma
  • 1 žlička cimeta

Priprava

1. Dve pomaranči operemo in ju olupimo z lupilcem sadja.

2. Lupino shranimo, pomaranči pa iztisnemo v pomarančni sok.

3. Olupke, ki smo jih dali na stran 3 x prekuhamo, s tem, da vsakič odlijemo vodo in znova nalijemo novo. S prekuhavanjem se bomo znebili grenkobe.

4. Medtem, ko se olupki prekuhavajo preostalim pomarančam in limonama odstranimo lupino ter bele vse delčke.

5. Pomaranče in limoni narežemo na koščke in jih damo v večjo, globjo ponev.

6. V ponev dodamo tudi prekuhano pomarančno lupinico in vodo. Kuhamo 50 minut.

7. Po tem času kuhanja, ponev odstavimo, pomaranče, limoni in olupke in vodo prelijemo v drugo posodo, v kateri s paličnim mešalnikom vse skupaj spasiramo.

8. Spasirano tekočino vlijemo nazaj v ponev, dodamo rum, cimet ter počasi vsipamo želirni sladkor, ter mešamo na srednji temperaturi.

9. Kuhamo in mešamo toliko časa, da marmelada postane gostejša. Približno 30 minut. Vsekakor se v ponvi še ne bo zgostila, do končne podobe.

10. Marmelado prelijete v z vrelo splaknjene oprane kozarce ter tesno zaprete. Čez noč pustite na kuhinjske pultu.

11. Dober tek, čaka vas eden izmed boljših sladkih zajtrkov!

Ingredients

  • 1.2 kg of peeled oranges
  • 2 lemons
  • 800 ml of water
  • 2 oranges for 150 ml of squeezed orange juice (or more if needed, depending on size)
  • 1.2 kg of gelling sugar
  • 30 ml of rum
  • 1 teaspoon cinnamon

Preparation

1. Wash two oranges and peel them with a peeler.

2. Store the peel and squeeze the oranges into the 150 ml orange juice.

3. Boil the peels 3 times and each time by pouring old water and pouring new water again. By boiling we will get rid of the bitterness.

4. While the peels are boiling remove the peel and white all the fragments to the remaining oranges and lemons.

5. Cut the oranges and lemons into pieces and put them into a larger, deeper pan.

6. Add the cooked peel and water to the pan. Cook for 50 minutes.

7. After this cooking time, remove the saucepan, pour the oranges, lemons, peels and water into another container and mix with the stick mixer.

8. Pour the salvaged liquid back into the pan, add the rum, cinnamon, and slowly pour in the gelling sugar and stir over medium heat.

9. Cook and stir until the jam becomes thicker. About 30 minutes. It will definitely not thicken in the pan, to the final image.

10. Pour the marmalade into boiled rinsed jars and close tightly. Leave it on the kitchen counter overnight.
