Italijanski sladek velikonočni kruh / Italian Easter sweet bread

Pleteni kruhasti venčki so letos zelo atraktiven del velikonočne pojedine. Jaz sem se odločila, da preizkusim tradicijo naših sosedov, italijanov.  Njihovo sladko pletenico sem dodatno obogatila s kandiranimi pomarančami in naribano pomarančno lupinico. Kruhek je puhast in slasten. Tudi marmeladna družba mu precej odgovarja 🙂

⎨EN⎬ They call it Pane di Pasqua

All kind of bread wreaths are a very attractive part of Easter this year. I decided to test the tradition of our neighbours, the Italians. I enriched their sweet bread with candied oranges and grated orange peel. The wreath is fluffy and delicious. Pane also likes to hang out with miss Marmalade 🙂

⎨SI⎬ Sestavine (za 3 venčke*)

  • 150 ml mleka
  • 40 g masla, narezanega na kocke
  • pol vrečke instant kvasa
  • ščepec soli
  • 50 g sladkorja
  • 1 jajce
  • 1 jajce + 1 žlica vode za premaz
  • 350 g moke
  • 3 surova jajca v lupini
  • 4 žlice kandiraih pomaranč ali drugega suhega sadja
  • 1 žlička pomarančne esence ali naribane pomarančne lupinice

*en venček je približno za 2-3 osebe

Postopek

  1. V manjši kozici segrejemo mleko in maslo. Pazimo, da ni prevroče, naj bo srednje toplo, toliko, da se maslo stopi.
  2. V večji posodi zmiksamo jajce, kvas, sol in sladkor.
  3. Suhi mešanici dodamo mokro mlečno mešanico ter z ročnim mešalnikom ali kuhinjskim robotom nadaljujemo mešanje.
  4. Nastavek za mešanje zamenjamo z nastavkom za gnetenje.
  5. Mešanici postopoma dodajamo moko in gnetemo, da se vse sestavije dobro spojijo.
  6. Dodamo še kandirane pomaranče in  pomarančno lupinico.
  7. Nastalo testo prestavimo na rahlo pomokano delovno površino in z rokami oblikujemo hlebček.
  8. Hlebček razdelimo na 6 delov in vsak del z rokami razvaljamo v dalši in ozek kos. Po potrebi dodatno pomokamo.
  9. Vzamemo po dva razvaljana kosa in ju prepletemo v pletenico.
  10. Prepletene venčke nežno položimo na pekač, obložen s peki papirjem.
  11. Na sredino vsakega venčka položimo surovo jajce in pustimo venčke, da vzhajajo na toplem približno 1 uro.
  12. Pred peko venčke premažemo z jajcem, ki smo mu dodali še žlico vode.
  13. Venčke damo v pečico in pečemo na 180 stopinjah 17-18 minut. V tem času se bo tudi jajce lepo skuhalo.

Nasvet 1: če želite jajca lahko predhodno tudi pobarvate, le imejte v mislih, da lahko spustijo malo barve na kruh.

Nasvet 2: če ne boste pojedli vseh venčkov, bodo sosedje zelo veseli sladkega presenečenja (preverjeno).

  • 150 ml milk
  • 40 g diced butter
  • half a bag of instant yeast
  • pinch of salt
  • 50 g of sugar
  • 1 egg
  • 1 egg + 1 tablespoon water to coat
  • 350 g flour
  • 3 raw eggs in shell
  • 4 tablespoons of candied oranges or other dried fruit
  • 1 teaspoon orange essence or grated orange peel

* one wreath is for about 2-3 people

Preparation

  1. In a smaller pot, heat the milk and butter. Make sure it is not too hot, keep it medium warm, until the butter has melted.
  2. In a larger bowl, mix egg, yeast, salt and sugar.
  3. Add the wet milk mixture to the dry mix and continue stirring with a hand mixer or kitchen robot.
  4. Replace the mixing attachment with the kneading attachment.
  5. Add flour gradually to the mixture and knead until all the ingredients are well combined.
  6. Add candied oranges and orange zest. Mix again.
  7. Transfer the dough to a lightly floured work surface and form a loaf with your hands.
  8. Divide the loaf into 6 pieces and roll each part into a longer and narrow piece with your hands. Add more flour if needed.
  9. We take two loose pieces and weave them into a braid.
  10. Gently place the wreaths on a baking tray lined with baking paper.
  11. Lay a raw egg in the middle of each wreath and let it rise in the warm place for about 1 hour.
  12. Before baking, brush the egg with egg with a tablespoon of water.
  13. Put the wreaths in the oven and bake at 180 degrees for 17-18 minutes. During this time, the egg will also cook nicely.

Tip 1: Tip 1: If you want to paint eggs beforehand, just keep in mind that they can release a little color on the bread.

Tip 2: If you don’t eat all the wreaths, the neighbors will be very happy for a sweet surprise (checked).
